Ingredients
- 2 large slices bread cut in half
- 1 tbsp butter
- 1 tbsp oil Avocado oil, sunflower oil, or canola oil all work well.
- 8 regular mushrooms sliced; chestnut mushrooms are a good option
- Large pinch of salt and pepper
- 1 clove garlic peeled and minced
- 170 g (6 oz) Brie sliced
- 6 sprigs of fresh thyme

Lightly toast the bread on both sides under a grill or broiler.

Heat the butter and oil in a small frying pan or skillet. Add the sliced mushrooms and cook over a medium-high heat for 5 to 6 minutes, until the mushrooms are browned and slightly crisp around the edges.

Reduce the heat, then stir in the salt, pepper, and minced garlic. Cook for 1 more minute, then turn the heat down to very low to keep the mushrooms warm.
