  • 80 ml cranberry juice, or as needed
  • 2 tbsp cornstarch (cornflour)
  • A few drops vanilla extract (optional)
  • 250 g (1 cup) light corn syrup or liquid glucose
  • Gel food coloring

Instructions

  • Mix the cornstarch with the cranberry juice in a small saucepan, stirring until smooth. Add the vanilla extract and glucose syrup or corn syrup, then stir to combine.
  • Place the pan over low heat and warm gently, stirring all the time, until the mixture begins to thicken. Do not boil. If it becomes too thick, add a little more juice or water.
  • Remove the pan from the heat. Stir in red gel food coloring until you reach your preferred shade. Add a tiny amount of blue, violet or brown coloring if you want a darker finish.
