Chocolate Peanut Butter Pretzel Bird Nests

Happy April! Ready for a new series? All month long Parrish and I will be sharing a new spring dessert each week — how fun! I’ve often seen adorable bird nest “cookies” made with chow mein noodles, but I wanted to put a twist on the idea using two of my favorite flavors: chocolate and peanut butter. I also coated the pretzels in chocolate and topped each nest with my absolute favorite candy — mini eggs. These little bites are dangerously addictive and perfect for spring or Easter.

Ingredients

  • 1/2 pound pretzel sticks
  • 2 cups milk chocolate chips
  • 1 cup creamy peanut butter
  • 1 stick unsalted butter
  • mini eggs, to top

Instructions

  • Put the chocolate chips, peanut butter, and butter in a microwave-safe bowl. Heat in 30-second intervals, stirring between each interval until the mixture is completely smooth. This usually takes two intervals, three at most.
  • Break the pretzel sticks into bite-size pieces and add them to the chocolate mixture. Use your hands to break the pretzels as you mix so they become evenly coated.
  • Line a baking sheet with wax or parchment paper. Scoop small portions of the coated pretzel mixture onto the sheet. Use the back of a spoon or your fingers to shape each portion into a tight nest, pressing a small crater in the center for the eggs.
  • Place mini eggs in the crater of each nest. Allow the nests to sit for at least one hour to firm up. For a firmer chocolate texture, chill in the refrigerator; otherwise, store in an airtight container at room temperature.
  • Serve and enjoy!
