I understand that not all coffee smells the same. There is the wonderful scent of freshly brewed coffee, and then there is the harsh, burnt smell of old office coffee that has been sitting on a hot plate for far too long. Those are completely different things. A homemade coconut latte falls firmly into the first category: warm, fragrant, smooth, and sweet enough to feel like a little reward.
The key to this drink is the homemade coconut syrup. This is not a latte made only with coconut milk, although you can certainly use coconut milk as your milk of choice if you want even more coconut flavor. The syrup is what gives the drink its signature taste. It is made with coconut sugar, coconut milk, water, and coconut extract, then stirred into fresh espresso before adding steamed milk.
The flavor is delicate but noticeable. You want enough coconut syrup to make the latte taste creamy, slightly tropical, and gently sweet, without overwhelming the coffee. Too much coconut extract or syrup can make the drink taste overly strong, so start with a small amount and adjust to your preference.

Ingredients
Coconut Syrup
- 1/2 cup coconut sugar
- 1/4 cup coconut milk
- 1/4 cup water
- 1/2 teaspoon coconut extract
To Make One Coconut Latte
- 1 shot espresso
- 1 to 2 tablespoons coconut syrup
- 4 to 6 ounces steamed milk with foam
- coconut sugar, for sprinkling
- toasted coconut, for topping

To make the coconut syrup, combine the water, coconut milk, and coconut sugar in a saucepan over medium heat. Whisk constantly until the sugar dissolves and the mixture begins to bubble. Turn off the heat and let the syrup cool completely. Transfer it to a jar and store it in the refrigerator.

To make the latte, brew one shot of espresso. Whisk in 1 to 2 tablespoons of the coconut syrup, depending on how sweet and coconut-forward you want the drink to be. Pour in the steamed milk with foam, then finish with a sprinkle of coconut sugar and toasted coconut.
